Introduction – Chef Lodge Kitchen Management
Hospitality and Outdoor is seeking an experienced Senior Sous Chef to join a prestigious luxury lodge in Phalaborwa, Limpopo. This is an exciting opportunity for a skilled chef with strong lodge kitchen management experience to join a professional hospitality operation. The successful candidate will support the Head Chef, maintain exceptional culinary standards, and lead the kitchen team in delivering consistently high-quality dishes and memorable guest experiences in Limpopo.
Job Requirements – Chef Lodge Kitchen Management
- Minimum 3 years’ experience as a Sous Chef or Head Chef in a 4/5-star lodge environment – Essential.
- Cooking and Hygiene qualifications are beneficial.
- Proven ability in menu compilation and implementation.
- Strong kitchen leadership skills, including coordinating staff, rostering, ordering stock and maintaining high presentation standards.
- Comprehensive knowledge of dietary requirements and the ability to accommodate guest needs.
- Experience creating, implementing and maintaining written control documents and training manuals.
- Strong understanding of stock procedures, portion control, stock rotation and kitchen cost control.
- Good knowledge of planning, budgeting and departmental administration.
- Ability to maintain excellent hygiene, health and safety standards and support recycling initiatives.
- Strong focus on training and developing junior kitchen staff while continuously improving personal culinary knowledge.
- Ability to manage the kitchen in the Head Chef’s absence and provide clear handovers between shifts.
- Careful handling of kitchen equipment, with maintenance issues reported promptly to management.
