Our client, a luxury lodge in Hluhluwe, seeks a passionate Sous chef with the guest experience and the care of the sustainability of the communities and environment as their core daily focus. 

Requirements

  • At least 2+ years’ experience in a similar position
  • Passion for kitchen management – including kitchen administration, general hygiene and people management
  • Passion for training staff, creating fabulous food and new ideas
  • Good interpersonal skills
  • Sense of urgency
  • Passionate about guest delight
  • Attention to detail
  • Diligence and self-motivation to meet deadlines and keep on top of your job
  • Willingness/ability to share information and teach and inspire others
  • Good communication skills

Description

  • Set hygiene standards
  • Responsible for training chefs and implementing kitchen standards
  • Abide by 7-day Menu set according to company approved standards
  • Work with the training chef when visits are conducted and be feedback fit
  • Presenting food in accordance with company set standards
  • Proactive maintenance
  • Have good control on stock and stock rotations
  • Responsible for all food orders, storeroom and fridges, in the absence of the Executive Chef
  • All food produced to be checked in the absence of the Executive Chef
  • Check all buffets, dinners and breakfasts
