New Vacancy – Sous Chef
Luxury Lodge – Grahamstown – Eastern Cape
Requirements:
- 2 years previous Sous chef experience in a 4/5-star Lodge environment
- Culinary Qualification
- Currently working under a head chef
- Currently involved in monthly stock takes
- Understanding of costing and control systems
- Preferably fine dining experience
- Cooking and Hygiene qualifications beneficial
- Menu compilation and implementation
Responsibilities:
- Support Head chef in the daily operations of the kitchen
- Keep work area at all times in hygienic conditions according to the rules set by the Head Chef
- Control food stock and food cost within the kitchen
- Assist head chef with monthly stock takes
- Prepare the daily “mise en place” and food production in different sections
- Ensure the highest standards and consistent quality in the daily preparation and keep up to date with the new products, recipes and preparation technique
Package on offer:
- R 12 500 per month (Depending on experience)
- Live – in position
- 3 weeks on/1 week off work cycle
