Requirements
- At least 5-7 years of experience in food and beverage management, with a minimum of 3 years in a senior leadership role within a luxury or 5-star hospitality setting.
- Proven experience managing diverse F&B operations, including fine dining restaurants, bars, room service, and special events.
- Experience in remote or lodge-based hospitality is a strong advantage
- A degree or diploma in Hospitality Management, F&B Management, Culinary Arts is highly desirable
- Ability to lead, mentor, and motivate a team of F&B professionals, including chefs, servers, bartenders, and support staff.
- Strong skills in recruitment, training, and performance management.
- Demonstrated ability to anticipate guest needs and deliver bespoke dining and beverage experiences.
- Proficiency in managing VIP and high-profile guests with discretion and professionalism.
- Expertise in managing all aspects of F&B operations, including inventory control, procurement, menu development, and quality assurance.
- Skilled in implementing and maintaining health, safety, and compliance standards
- Strong understanding of budgeting, cost control, and financial reporting.
- Ability to analyze financial data and optimize revenue and profitability while maintaining quality standards.
- Comprehensive knowledge of fine dining trends, international cuisines, wine pairings, and cocktail crafting.
- Ability to collaborate with the Executive Chef to design innovative menus and beverage programs.
- Experience in planning and executing events, such as private dining, weddings, and corporate retreats, tailored to the lodge’s luxury standards.
- Capability to manage high-pressure situations, resolve conflicts, and make decisions quickly and effectively.
- Familiarity with F&B management software, POS systems, and inventory management tools.
- Energetic, approachable, and passionate about hospitality and guest satisfaction.
- Meticulous attention to detail and commitment to excellence.
- Cultural sensitivity and an understanding of sustainability and eco-friendly practices in hospitality.
- Adaptable to the challenges of operating in a remote or wilderness environment.
- Willingness to work irregular hours, including evenings, weekends, and holidays, as required by the lodge’s operations.
- Comfort with living and working in a remote lodge setting, often with extended stays on-site.
- Fluency in English is essential; additional languages relevant to the lodge’s guest demographics are an advantage.

- Salary: R15 000 – R18 000 depending on experience
