Requirements

 

  • At least 3 – 5 years’ experience in restaurant management with a minimum of 2 years in a senior management role
  • Proven experience managing operations within a luxury 5-star hospitality setting preferably within a lodge setting
  • Comprehensive understanding of fine-dining, international cuisine and wine pairings
  • A diploma in Hospitality Management or similar will be highly beneficial
  • Exceptional ability to lead, inspire, and develop a diverse team, including chefs, servers, and support staff.
  • Skilled in performance management, team building, and conflict resolution.
  • Demonstrated ability to deliver impeccable guest service, tailored to a discerning clientele.
  • Proficiency in handling VIP guests and creating memorable dining experiences.
  • In-depth knowledge of restaurant operations, including menu planning, inventory management, and budgeting.
  • Familiarity with point-of-sale (POS) systems and reservation platforms.
  • Experience with health, safety, and compliance standards in high-end dining.
  • Strong skills in budgeting, cost control, and financial reporting.
  • Ability to analyze and optimize restaurant revenue and profit margins
  • A deep appreciation of fine dining trends, sustainability, and locally sourced ingredients.
  • Skilled at managing high-pressure situations with professionalism and composure.
  • Capable of resolving guest complaints and operational challenges effectively.
  • Ability to design and implement training programs to enhance service standards and staff competence.
  • Charismatic and approachable, with excellent interpersonal skills.
  • Meticulous attention to detail and a passion for luxury hospitality.
  • Adaptable, culturally aware, and respectful of the lodge’s unique environment and guest demographic.
  • A hands-on manager with a proactive, problem-solving mindset
  • Willingness to work in a remote lodge setting with extended hours, weekends, and holidays
  • Ability to stand for long periods and engage in physical activities related to restaurant operations.
  • Fluency in English is essential; additional languages relevant to the lodge’s guest profile are a plus.

 

Package

 

  • Salary: R15 000 – R18 000 depending on experience
  • Live-in position
