Kitchen Manager
Luxury Safari Lodge- Timbavati, Kruger Area

Strong, Dynamic Kitchen Manager needed for this beautiful safari lodge. A proven track record in head chef management and a strong background in Kitchen administration is needed to excel in this role.

 

Requirements

  • Minimum of 4 Years previous senior chef experience in a 4/5* Safari Lodge Environment in a remote setting (Essential)
  • Strong Management and Admin skills- this is a BOH job in the kitchen with emphasis on admin, not cheffing, however if needed you will be able to help with service.
  • Food Hygiene and professional cooking qualifications (Essential)
  • Provides Strong Support to the Exec Chef and the kitchen staff.
  • Excellent plating standards- attention to detail, making sure every plate is up to standard for guests.
  • Knowledgeable of all dietary and religious requirements
  • Good knowledge of creating, implementing, and maintaining written control documents and training manuals
  • Excellent knowledge and understanding of stock procedures and control- ensures wastage is kept to a minimum
  • Strong Admin and Financial Acumen- Excellent knowledge of planning, budgeting, and departmental administration- ensure the kitchen is well planned and catered for with no unplanned shortages within budget
  • Excellent HR Skills- Control all staff rosters, discipline and procedures
  • Daily maintenance and cleaning schedules for kitchen equipment, any general maintenance experience is beneficial
  • Organizing preventative maintenance or replacements as needed- making sure all equipment is in tip top shape.
  • Coordinating and Supervising restaurant kitchen staff to food and safety standards
  • Training and scheduling of staff- identifying problem areas and addressing them through training
  • Supervise food prep and cooking- help running the pass if need be.
  • Mature, responsible well-presented individual who can problem solve and are of sober habits
  • Great team player who can work well under pressure
  • Very Organized and detail-oriented in their admin work
  • Hands on, running shifts- setting an example from the front line
  • Excellent people skills in terms of managing staff and interacting with guests
  • Computer Literate (Word, Excel, Micros)
  • A sober hard-working individual

 

Description

  • Systemize and streamline the kitchen administration – ordering stock, food preparation and presentation, timely delivery, wastage reduction, hygiene, budget control from receiving to execution
  • Maintain and go above the established standards of food hygiene, cleaning and food handling to maintain impeccable quality within the kitchen, which meet current standards of legislation and compliance.
  • Proven record of managing staff emphatically and establishes a positive and co-operative atmosphere between employees
  • Implement, monitor, and maintain constant communication between the Kitchen, Management and Front of House staff.
