Our client, a luxury game reserve in Grahamstown is looking for an experienced, fine-dining head chef to join their team.
Requirements
- At least 2 years’ experience as a Head Chef essential
- Diploma in Professional cookery or similar beneficial
- Previous lodge experience beneficial
- Fine dining experience preferred
- Costing experience essential
- Ability to design seasonal, sustainable, and innovative menus that cater to diverse dietary preferences and restrictions
- Sound knowledge of health and safety requirements and storage
- Strong communication skills
- Expert-level plating and aesthetic presentation of dishes.
- Proficiency in managing inventory, ordering supplies, and maintaining cost controls while minimising waste.
- Ability to lead, train, and motivate a diverse kitchen team.
- Experience in creating staff schedules and managing labor costs.
- Strong interpersonal skills to resolve disputes and maintain a harmonious kitchen environment.
- Adaptability to cater to specific guest requests and handle unexpected situations gracefully.
- Ability to manage a kitchen budget effectively, including monitoring profit margins and controlling expenses.
- Capability to manage dining events, special occasions, and high-profile guest requests.
- Passion for excellence and delivering an exceptional culinary experience.
- Strong organizational and multitasking abilities.
- Professional demeanor, even in high-pressure environments.
- Commitment to sustainability and environmental awareness in food sourcing and preparation.
Package
- Salary: R20 000 – R26 000 depending on experience
- Live-in
- 21 days on and 7 days off cycle
