Luxury Game Reserve – Grahamstown – Eastern Cape

 

Our client, a luxury game reserve in Grahamstown is looking for an experienced, fine-dining head chef to join their team.

 

Requirements

 

  • At least 2 years’ experience as a Head Chef essential
  • Diploma in Professional cookery or similar beneficial
  • Previous lodge experience beneficial
  • Fine dining experience preferred
  • Costing experience essential
  • Ability to design seasonal, sustainable, and innovative menus that cater to diverse dietary preferences and restrictions
  • Sound knowledge of health and safety requirements and storage
  • Strong communication skills
  • Expert-level plating and aesthetic presentation of dishes.
  • Proficiency in managing inventory, ordering supplies, and maintaining cost controls while minimising waste.
  • Ability to lead, train, and motivate a diverse kitchen team.
  • Experience in creating staff schedules and managing labor costs.
  • Strong interpersonal skills to resolve disputes and maintain a harmonious kitchen environment.
  • Adaptability to cater to specific guest requests and handle unexpected situations gracefully.
  • Ability to manage a kitchen budget effectively, including monitoring profit margins and controlling expenses.
  • Capability to manage dining events, special occasions, and high-profile guest requests.
  • Passion for excellence and delivering an exceptional culinary experience.
  • Strong organizational and multitasking abilities.
  • Professional demeanor, even in high-pressure environments.
  • Commitment to sustainability and environmental awareness in food sourcing and preparation.

 

Package

 

  • Salary: R20 000 – R26 000 depending on experience
  • Live-in
  • 21 days on and 7 days off cycle
